A slice of apple pie a day....

A few of the things I love about autumn are the vibrant colors of the leaves, the sound of chirping crickets in the evening, and the fresh, sweet, crisp local apples!

There are so many wonderful varieties out there. Some varieties are easy to find, such as Gala, McIntosh, Red Delicious, Golden Delicious, and Braeburn. Some are more difficult to come by. These include Honeycrisp, Ambrosia, Crispin, Empire, and Pacific Beauty, just to name a few.

Fresh apples are the main ingredient for one of my favorite pies for autumn!

For this recipe I chose Golden Delicious and Gala (mainly because that's what was in my crisper). I do think Honeycrisp would be such a nice choice as well!

Here is what went into this scrumptious pie:
  • 1 pie crust (either handmade or ready made)
  • 3 Gala and 3 Golden Delicious Apples, peeled and thinly sliced (about 6 cups)
  • 1/4 cup raw sugar
  • 1 tbsp of honey
  • juice from 1 lemon
  • 1/2 tsp ground cinnamon
  • 1 1/2 tbsp corn starch
For the oatmeal topping:
  • 1 cup whole wheat flour
  • 1/2 cup rolled oats
  • 2/3 cups of packed dark brown sugar
  • 1/4 tsp kosher salt
  • 1/2 cup cold butter, thinly sliced (about 1/4 inch)

Press pie crust into pie pan.

In a large bowl toss together the apple slices, honey, sugar, lemon juice, cinnamon, and corn starch.

Spread evenly into pie crust. Bake in a 400 degree oven for 25-30 minutes.

While apples are baking prepare the topping.

Place the flour, oats, brown sugar, and salt into a food processor and pulse to mix a bit.

Add in the cold butter and pulse to combine. Pour into a large bowl and use fingers until mix resembles large crumbs.

Remove apples from oven. Carefully pour oat mixture evenly over top of apples and press down evenly like so.

Lower oven temperature to 375 and place back into the oven for another 25 minutes.

Allow to cool before cutting.

Serve with whipped cream or maybe a scoop of vanilla bean ice cream. Delightful!

As a kid I used to eat 5-6 apples a day, especially in the winter.
Now I prefer stuffing my desserts with them. This looks and sounds like my type of dessert

Yeah, thanks a lot - I just gained 5 pounds reading that post! And of course I'd put whipped cream or a scoop of ice cream on top. I've never seen a top crust like that - that just looks WAYYYY too good. Also, in the directions, it said to toss the apple slices and lemon slices (are we supposed to use the actual lemon, or just the juice?). Have a great day, girl ~

I still can't feel the autumn in Hong Kong, it's still very hot here. But the popping up of dragonflies is a sign of autumn here, and I have seen some these days.

This is an apple pie to remember. I could eat those apples, cut up and cooked with cinnamon but in the pie, they become something greater and better.

OUR apples are not quite ready yet. There are apples orchards about 45 minutes away from our house and they show up in the market soon!! Can't wait. :)
