A Panini with Apples a Day Keeps the Doctor Away!

I think I love Paninis almost as much as wraps! Wow! How is this possible? Well, it all started earlier today when I got a hankering for apples, oh yes, and more bacon. This got my brain gears turning. I decided a trip to Trader Joe's was in order. I grabbed my basket and headed over to the produce area, grabbed a couple of Granny Smith's. I spotted some corn and that went into the basket as well. Now, on to the bacon. Right beside the bacon I spotted some smoked turkey and then smoked gouda came to mind. It's all kind of muddled from there on out (this can happen at TJ's) and I found myself at the register with a full basket and the makings for this fantastic Panini!



This is what I put into my Panini:
8 pieces of sourdough bread
1 package of smoked maple turkey lunch meat
8 slices of applewood dry cured nitrate free bacon, cooked crisp
1 Granny Smith Apple, thinly sliced
8 slices of smoked Gouda
hot Dijon mustard



Stack all the ingredients between two slices of bread. Place into a Panini press, George Foreman, or griddle (If you use a griddle place a nice heavy cast iron pan on top to press.) and cook until bread is golden brown and cheese is all gooey and melty.

I also wrapped up four ears of corn in a bit of foil and placed them on the grill for about 15 minutes. I topped the corn with butter and Trader Joe's spice blend.



I received a standing ovation from my family for this Panini! It was like a commercial or something! Just kidding! We really did love this though. It was just so full of fabulous flavor. The apple added a terrific crunch.

The corn was a really nice side for the sandwich. I love my corn grilled, it adds such nice flavor.




You know, this Panini would actually be great as a wrap too! Hmm... ;0)

I found a recipe that called for granny smith apples, peanut butter and honey. Toast the bread.

This reminded me of it but for the meat lovers this sounds better :)

Great lunch or dinner...I had contemplated using my Foreman grill as I don't have a panini maker. Thanks for the tip about weighting it.

oh yeah! what a great pannini - my favorite combo is a nice ripe brie with a crispy granny smith and some black forest ham - this reminded me of that!

I love paninis. I actually rare eat regular sandwiches anymore unless they are PB+J. There's just something about toasty bread and melted cheese that can't be beat. I love this combination for a sandwich! I have actually definitely been craving gouda lately...
