First of all, I want to be more clear on something related to my last post. I am not the brilliant mind that came up with the orange rind cupcake cup. The credit for this ingenious idea really goes to the talented cupcake master at Cupcake Project. I did use my own cupcake recipe though. I just wanted to make sure all of you wonderful peeps understand this. I don't like to take credit for ideas that are not mine! Plus, I never want my pants to catch fire!! ;0)
Alright, without further adieu, here is my Oh-So-Scrumptious Blueberry Buttermilk Ice Cream!
Let me tell ya making your own ice cream is a bit of a chore but so worth all of the trouble!
You will need:
2 cups of fresh blueberries
3/4 cups sugar, divided
juice from 1 lemon
2 cups heavy cream
1 cup buttermilk (I used reduced fat)
6 egg yolks
1 tsp vanilla
1 tsp lemon rind
Blueberries for garnish (optional)
Heat the blueberries, 1/4 cup of sugar, lemon rind, and 1tbsp of water on medium low heat until blueberries begin to soften and pop. Remove from heat and allow to cool. Place in the fridge to cool.
Beat the egg yolks and set aside.
Beat the egg yolks and set aside.
Next, combine cream, buttermilk, remaining sugar, vanilla and lemon juice. Cook over medium low heat, stirring often to avoid scorching. Cook just until it starts to simmer. Pour 1/2 of this mixture in with the egg yolks, whisking constantly. Pour this mixture back into your remaining cream mixture. Pour all this into a large bowl and chill in fridge.
Remove the cream mixture and blueberries from the fridge and fold the berries into the cream mixture.
Place into an ice cream maker and let it do it's thing for about 20 minutes or until soft set.
This was really amazing with the buttermilk! Watch out! It's addictive stuff!

This sounds fabulous!! However, I must admit to being afraid to make a base with eggs. I tried a vanilla ice cream recipe with eggs...and all I could taste were the eggs. I haven't used an egg base since. I know it could have just been the recipe...
This one could certainly change my mind about trying an egg based recipe again! :-)

Ice cream made with blueberry buttermilk is an enjoyment anytime. Have you tried fried ice cream? hmmm....I miss the time when I didn't have to worry about the weight and just ate what I love....
