Mexican Meatball Soup

Who doesn't love soup? I mean it's just so warm and satisfying. Well, I'll tell you who doesn't share in my take on soup, My husband. He HATES soup! When he saw this his response was, "What, have you been seeing a lot of soup posts on the blogs you follow lately?". Hmph!

I don't know exactly why I wanted to make soup. Maybe it's because I can hear the whisper of autumn on the evening breeze. Maybe I was feeling a little glum and needed a bit of comfort in a bowl. Maybe I wanted to make soup for soup's sake!

I remember eating a soup like this years ago but I couldn't remember exactly what was in it so I hunted around a took a bit of this and that from several different recipes and threw some of my own ideas in as well.

Apparently this kind of soup is called Albondigas Soup.

Here is my version.

For the meatballs:
1 lb lean ground beef (I found some Kosher beef at Trader Joes.)
1/2 cup plain breadcrumbs
2 tbsp half and half
1 large egg, lightly beaten
1 tbsp dried minced onion
1 clove minced garlic
1 tsp Kosher salt
1/2 tsp dried oregano
1/2 tsp ground cumin
1 tsp chili powder
cracked pepper

Mix all of the ingredients together and form into 12 or so equally sized balls.

For the soup:
2 quarts chicken broth
1 15 oz can of ROTEL diced tomatoes with green chilies and cilantro
4 oz can of roasted green chilies
1 15 oz can of kidney beans, drained and rinsed
1 tbsp of dried oregano
1/2 tsp cumin
1 tsp chili powder
1/2 cup white rice
2 ears of corn cut into 1 inch pieces
salt and pepper to taste

Place the chicken stock, tomatoes, chilies, oregano, cumin, and chili powder in a large saucepan. Bring to a boil. Add the beans and rice. Cook for 10 minutes. Carefully add the meatballs and simmer for 10 minutes more. Add the corn and simmer for another 5-7 minutes.

You can garnish this with just about anything that floats your boat! Sour cream, cilantro, hot sauce, diced fresh tomato, tortilla chips, cheese and/or guacamole would all be nice choices.

Soup is important in Cantonese cuisine, we eat soup nearly every dinner, no matter it's summer or winter, coz we have soups for 4 seasons, ^^.

Sounds like a delicious soup, so great with meatballs! My grandmother used to make a soup with chicken meatballs that was my ultimate comfort food, loved it!

The only soups my hubby will eat are New England Clam Chowder and Cioppino. Otherwise, forget it.

I like soup but only when it's quite chilly outside. I can't abide it when the weather is warm. Is that weird?
