Happy Lemonade Day!

I found out a little late in the day that August 20th is National Lemonade Day! I really wanted to get in on the fun so I decided to make these Pink Lemonade Cupcakes. Aren't they just the cutest!

Makes 18 cupcakes

I used a basic yellow cake mix for this.

2 1/4 cups all purpose flour
1 1/4 cups sugar
1/2 cup softened butter
1 1/4 cups milk
3 tsp baking powder
1 tsp salt
1 tsp pure lemon extract
3 large eggs

Place all ingredients into a large mixing bowl. Mix on low for 30 seconds, scraping down sides of bowl as needed. Mix on medium speed for 3 minutes.

Fill lined muffin tins about 2/3 full and place into a 350 degree oven for 16-18 minutes or until toothpick inserted comes out clean.

You will also need an 8oz can of frozen pink lemonade concentrate and 3/4 cups confectioners sugar.

While cupcakes are still warm poke several holes in the top of each one. I used a chopstick but you can also use a fork. Combine the pink lemonade and the sugar. Pour into the holes.

I topped the cupcakes of with some fresh whipping cream to which I added 1 tbsp of sugar and 1/2 tsp of lemon extract.

I love all of the terrific lemon flavor going on in these! They would also be nice with a fluffy whipped frosting.
