Do you ever feel a little uninspired? You pour over your cookbooks and favorite blogs and nothing hits you in the face and says, "I'm the one!". Do I want salad? Do I want something sweet? Maybe I want to grill up something tasty. But What??? I think I'm in a bit of a rut. I need to feel inspired again!
I came up with this yummy chicken tonight and I got some terrific feedback and even requests for seconds. I have to admit it was pretty darn tasty!
It was a fairly easy meal to prepare.
Here is what you'll need:
8 chicken tenders
4 pieces of bacon, cut in 1/2
For BBQ Sauce:
1/2 cup hoisin sauce
2 cloves minced garlic
1 tsp grated fresh ginger
1/2 tsp lemon zest
juice from 1/2 a lemon
1 tsp sugar
2 tbsp ketchup
1 tsp sesame oil
1/2 tsp cracked pepper
Wrap 1/2 a piece of bacon around each chicken tender. Combine all sauce ingredients and give it a good stir.
Place bacon wrapped chicken on a medium grill and cook until just about done. Baste both sides of chicken with BBQ sauce and continue to cook until done. This should cook for about 10 minutes or so on each side.
Place remaining sauce into a small sauce pan. Bring to a boil and cook for a couple of minutes (You'll probably want to add a bit of water to the sauce while it's cooking.) to kill any bacteria. Spoon over chicken. Serve with veggie of choice or a nice green salad with an Asian dressing.
This was so great but I gotta tell ya, I'm still not feeling it. You know what I think the problem really is? I haven't been able to get to the theater to see the Julia Child movie. Either that or I haven't been hanging out over at girlichef's blog enough!

I think we all go through these uninspired moments. You just have cooking block (kind of like writer's block but less tasty) but it will pass. I personally think this grilled chicken looks delicious. I love new takes on bbq sauce.
