During my lifetime I have eaten my share of zucchini bread. I always enjoy eating it but I never really think it's anything to write home about. Until NOW!! This zucchini bread has done its homework. This zucchini bread means business! I would go so far as to say that this zucchini bread Kicks Butt!
I took a chocolate zucchini recipe that my mom gave me ages ago and I turned it upside down and came up with this winner.
Here are the very secret ingredients:
1 stick of butter, softened
1 cup packed brown sugar
3 eggs
1/4 cup honey
2 tsp vanilla
1 cup plain nonfat yogurt
2 1/2 cups whole wheat flour
2 1/2 tsp baking powder
1 tsp salt
2 tsp cinnamon
2 cups shredded zucchini
1/2 cup chocolate chips
1/3 cups chopped toasted hazelnuts
6 tsp Nutella
Cream together butter and sugar.
Add in eggs, honey, vanilla. Mix well.
Add in yogurt, flour, baking powder, salt, cinnamon. Stir just until combined.
Fold in zucchini, chocolate chips, and hazelnuts.
Divide between 2 greased loaf pans. Place 3 tsp of Nutella on top of each pan of batter. Swirl with a fork. Place into a 350 degree oven.
Bake for 50-60 minutes until toothpick inserted comes out clean.
You really have to try this one! Come on. I Double Dog Dare Ya! ;0)

My neighbor asked me to bake her some zucchini bread but I haven't been able to decide which recipe to use until now!

I would say that the nuts, the chocolate chips and the Nutella would definitely put this over the top with flavor. Great recipe and very creative.

I haven't had zucchini bread in ages, and then it's the pretty standard recipe, no thrills, no frills. This one has it all!
Oh my gosh, I think I'm gonna faint. I'm catching up today and between the zucchini bread with the Nutella and the chicken alfredo wrap things, I don't know which to do first! You know what I started doing, keeping a notebook by the computer and writing down the recipes I want to make and what I need to buy. Like I have most the stuff for the zucchini bread but no Nutella - and we just finished some! I'm gonna go waddle off to the kitchen now. Way to go with these recipes!! ♥
