Back-to-School Apple Blueberry Oat Muffins

With the start of school just around the corner I've been on the prowl for some quick and healthy breakfast ideas.

I spied an apple oat muffin recipe over at Good Housekeeping's website and I did some addition, subtraction and just a bit of multiplication and I came up with this yummy recipe.

Here is what you'll need:

2 cups of rolled oats
1 1/4 cups of whole wheat flour
1/2 cup packed brown sugar
2 tsp baking powder
3/4 tsp baking soda
3/4 tsp salt
1 tsp ground cinnamon
1 cup buttermilk
1/4 cup melted butter
1/3 cup applesauce
1 tsp vanilla extract
1 large egg
1 tbsp honey
1 cup peeled, diced Granny Smith apples
2/3 cups fresh blueberries

In a large bowl combine oats, flour, sugar, baking powder, baking soda and salt. In a smaller bowl mix together the buttermilk, melted butter, applesauce, vanilla, egg, and honey. Add to flour mixture and stir just until combined. Gently fold in diced apples and blueberries.

Fill lined (or unlined) muffin cups nearly full and bake in a 375 degree oven for 18-20 minutes or until toothpick inserted comes out clean.

These muffins will cause your kids to achieve straight A's for the entire school year! Not really. They will, however, fill up their tummies with goodness and help them with stamina and concentration until lunchtime.

These would also be great as an after school snack before the start of homework.

BTW, these muffins are every bit as good for grownups as they are for kids. :0)

Hi Kim, thank you for your comment. Your Blueberry Muffins look good and healthy and I am sure they taste delicious. If it is al right with you I copy the recipe and send it to my daughter. My granddaughter 13, loves to bake muffins. I am sure they will become a favourite.

Kim, That happened to me the other day as well. All the blogs I was following were gone!!! Then within a couple of hours they were all back?!?! Weird!!! I was so worried that someone would think I didn't like them anymore! lol... I've seen it happen before - someone would disappear and then come back. I was confused at the time, but totally understand it now. Just something weird with Blogger!!! No worries - glad you're back!!! ;) Still lovin' your blog <3

I'd love to have some of this for my breakfast. I love oats and I love blueberries in muffins. I recently began to like apples in muffins, so you've posted this just at the right time.

I haven't made muffins in a long time. I think it's time I have a muffin fix.

I never get sick of oat muffins. They are just asking for breakfast on the go. Nice job on the blueberry addition for a little extra end of summer fun :)

Kim, these look great! I am a big muffin maker myself but have been slacking in that area since summer. Now that the kids are back to university I may be bringing muffins in to work more often! I've bookmarked your recipe to try! (PS I also stumbled this for you!)

Kim, I believe you're a great parent! I don't think I will ever have children in my whole life, so it's beyond my imagination how difficult it is.
