I LOVE Summertime! It's all about fun in the sun!
Ice Cream is one of my favorite summertime treats!
When I was a kid my parents would often take my sister and I to Baskin Robbins or Bresslers to get ice cream cones. I would always get the same flavor. Mint Chocolate Chip. I really like the kind that has the little flakes of chocolate throughout the ice cream as opposed to the kind with the big chocolate chunks. Chocolate Chip Mint is still my favorite flavor but strawberry runs a close second.
My kids really like Neapolitan so I thought I'd whip them up a special treat for today.
This recipe is easy and fun!

This recipe is easy and fun!
You'll need these items for your cupcakes:
1/2 cup butter
1/2 cup unsweetened cocoa powder
1/3 cup flour
1 cup sugar
1/4 tsp salt
1/3 cup chocolate chips
2 eggs
1 tsp vanilla extract
1/4 cup Nutella
Neapolitan ice cream
12 cupcake liners
Whipped cream
Chocolate bar
Preheat the oven to 325 degrees. Melt the butter in the microwave.
Add the cocoa powder.
Give it a good stir.
Add the sugar, flour, salt, eggs, chocolate chips and vanilla. Stir to combine.
Fill cupcake liners 1/2 full. Bake for 18-20 minutes until done.
Allow brownies to cool completely. Frost with a thin layer of Nutella.
Top with a scoop of ice cream, a bit of whipped cream and chocolate shavings.
I gotta tell ya, these ROCK! You have got to try them before summer is over!

FUN!! And yummy (see...cupcake queen!)...it's hard to choose a favorite flavor for me. As a kid, it was Blue Moon, which I still love...but I also love Pistachio, Buttered Almond, Mint Chip, Cookie Dough, Vanilla.....
Nice!! Ice cream and brownies together can't be beat. Put them in a cupcake and you've sold me on that. Plus a frosting of nutella... GIVE ME SOME!!!!!!

Mint chocolate chip was always the flavour I picked too if given the choice. These look amazing - I would eat the entire batch.
Oh my god. Nutella AND ice cream - I think you've just made my day. My favorite ice cream flavor is birthday cake, definitely. And this white chocolate chip cranberry cheesecake ice cream that I got from this small ice cream place in Boston. But I may never find that again.
I love coffee ice cream with hot fudge, whipped cream and almods sprinkled on the top... but I haven't really met the ice cream I don't like yet, either :)

Those cupcakes are heaven.
I think I'll put some ice cream on my brownie cookies, this is as close as I can get in this moment.
My favourite are all fruit flavours, but there's a great icecream shop in Bologna where they have amazing flavours that are all incredible combinations of 3 or 4 flavours.
And I was forgetting, Nutella flavour icecream.
I'm sure your kids went crazy for these! I know I would have!

Nutella put me right over the edge:) Yummy. My favorite flavor from the frozen section of the market is Cherry Garcia. My favorite one to make at home on my machine is probably peach.

What delicious treats! I love the Nutella frosting!! I have a few favorites - Peanut Butter Cup, Cherry Vanilla, anything with caramel, and the peppermint one that comes out for Christmas.
