Does anyone love wraps as much a I do?

I spotted this fabulous salsa in the July issue of Real Simple magazine. I changed things around just a bit. The original recipe calls for arugula, which I know would have been divine, but I didn't have any on hand so I stuck in some fresh basil instead. It tasted very nice as well. I wrapped the salsa up with some grilled chicken and a bit of hummus.

Serves 4-6
Salsa Ingredients:
1 15 oz can of chickpeas, coarsely chopped
1 roasted red pepper, chopped
1/2 cup green onion
1/4 cup chopped basil
1 clove chopped garlic
juice from 1 lemon
2 tbsp extra virgin olive oil
1/2 tsp kosher salt
cracked pepper
You will also need:
4 Grilled Chicken Breasts, sliced
1 Container of Hummus
4-6 Large Flour Tortillas
I marinated the chicken in a little lemon juice, olive oil, salt and pepper before grilling.
Toss all of the salsa ingredients together and refrigerate for several hours to let the flavors come together.
Spread a bit of hummus on a flour tortilla. Layer with grilled chicken and the salsa. Roll up tightly and enjoy! This is really fresh and bright. A perfect wrap for summertime.

That sure is a gorgeous summer wrap. I'm taking this recipe with me on vacation, since I won't have the oven, I'll need stuff like this.
I will be trying this the next time we grill. What a great idea to put a layer of hummus on there. I love hummus.

I love wraps too! These look delicious - any chance I get to use chickpeas and I'm all over it.
I think the basil gives this dish extra "ooomph". And I've never tried chickpeas in a wrap before.

Oh, this looks great!! I found some tortillas at Costco that are raw and you cook them right before using. This would be sooo good!

Why, oh why, even if I'm not hungry when I visit here, I leave wanting to go eat!!! The recipes are great, but the pictures really do it justice. Same way with cookbooks - if they don't have pictures, I usually put them back. Another great recipe for me - THANKS! I've never eaten a chickpea, but I'm a big girl now so maybe I'll give it a try. :)
