I had something completely different planned but at the last minute I changed my mind. My Husband's family came over for Father's Day and brought baby back ribs to grill so I thought this recipe was a better choice.
I had something completely different planned but at the last minute I changed my mind. My Husband's family came over for Father's Day and brought baby back ribs to grill so I thought this recipe was a better choice.
- 3 cups finely sliced kale
- 1/2 cup sliced green onion
- 1/2 cup carrot, cut into matchstick sized pieces
- 1/2 cup diced red bell pepper
- 1 tbsp grated fresh ginger
- 1/3 cup wasabi mayo
- 1 tbsp rice vinegar
- garnish with Eden Shake (sesame seed and sea vegetable seasoning blend)
Wilt the kale in a small amount of boiling water. This will only take a minute so watch carefully!
Remove from heat, drain and rinse immediately in cold water.
Place the veggies in into a bowl. In another small bowl, combine the wasabi mayo and rice vinegar. Toss with the veggies and garnish with Eden Shake.
I really enjoyed the flavor and texture in this slaw. If you like slaw with a kick, then you will love this!

This is pretty, with the tomato and carrots giving contrast of color to the greens.I'm sure it was a great side dish to the baby back ribs.

My husband would love everything about that. I've never cooked with kale before. I guess I'm not a greens person, but maybe I need to change my ways.

I love the idea here! The flavors sound like a fantastic combination. Mayonnaise, however, is not my thing. I am thinking that I might get around that with an oil based dressing and still enjoy the kale, ginger and wasabi combination. Inspiring.

Gorgeous slaw. I don't use kale very often - this makes me think I might be missing something. Anything with wasabi and ginger is ok in my book. Love that girlichef too.

I'm always running out of ideas when it comes to kale, I usually throw it in a soup but this dish really highlights in in a delicious way :)!
