Just in case you haven't heard, this week's BSI Challenge is being hosted by one of my new found bloggy friends, DoggyBloggy of Chez What? and his Secret Ingredient Pick is: Potatoes! Who can resist potatoes?
And who can resist a big plate of yummy potato salad! I thought with the 4th of July on it's way this would be a great choice for my entry. My basil is growing like crazy in the garden right now! I knew it would be the perfect addition to my salad!
- 6 Yukon Gold Potatoes
- 1/2 cup low-fat buttermilk
- 1/2 cup light sour cream
- 1/ 2 cup chopped fresh basil
- 1/4 cup sliced green onion
- 2 cloves chopped garlic
- 1 tbsp olive oil
- 1/2-3/4 tsp salt
- 1/2 tsp white pepper
First, you will want to prick 6 Yukons several times with a fork and stick them in the microwave for about 5 minutes. Then, wrap them in foil and stick them on the upper deck of the grill and cook for about 15 minutes until the potatoes are tender but not mushy. Let them cool a bit and then cut into pieces.
Saute the chopped garlic in a little olive oil for a minute or two. Allow to cool for a couple of minutes.
In a large bowl, whisk together the basil, green onion, garlic, buttermilk, sour cream, salt, and pepper.
Stir in the potatoes.
You can serve this warm or let it chill a bit.

I love potato salad. I've thought of using butter milk and basil. The stuff I usually east has some sort of may concoction in it. This definitely looks way better!! Saved!
