Double Lemon Blueberry Cupcakes with Lemon Cream Cheese Frosting



This week's BSI is being hosted by none other than the fabulous Reeni of Cinnamon and Spice. The ingredient Reeni has chosen for this week is Blueberries.

I decided on these yummy Lemon Blueberry Cupcakes. I just love this flavor combination!



Here is what you will need for these scrumptious little cupcakes:
  • 2 1/4 cups all purpose flour
  • 1 1/4 cups sugar
  • 1/2 cup softened butter
  • 3/4 cups low-fat buttermilk
  • 1/2 cup lowfat milk
  • 3 tsp baking powder
  • 1 tsp salt
  • 1 tsp vanilla
  • 1 tsp lemon extract
  • 1 tsp grated lemon zest
  • 3 large eggs
  • 1 cup fresh Blueberries
Using an electric mixer, combine the butter and sugar. Add the vanilla, lemon extract, lemon rind, and eggs (1 at a time), stir to combine. In a small bowl sift together the flour, baking soda and salt. Add the buttermilk, milk, and flour to the butter mixture. Beat on low for 30 seconds to combine, scraping sides of bowl as needed. Beat on medium speed for 2 minutes. Gently fold in the Blueberries.

Fill paper lined muffin tins 2/3 full with batter. Bake at 350 degrees for 15-20 minutes until toothpick inserted into center of cupcake comes out clean. Allow to cool completely before frosting. Make 2 dozen cupcakes.



For the Lemon Cream Cheese Frosting:
  • 2 oz of light cream cheese
  • 1 tbsp milk
  • 1/2 tsp vanilla
  • 1/2 tsp lemon extract
  • 3 cups powdered sugar
Combine cream cheese, milk, vanilla, and lemon extract. Add the powdered sugar a little at a time until desired consistency is reached.



I have to tell you that I am quite the klutz and so far this week I have managed to stab my hand with a knife and grate my knuckle on the cheese grater while grating my lemon peel. I feel like such a chef! :0)

These came out so wonderfully moist and delicious. I know you will love them!

I love hearing about other people doing klutzy stuff in the kitchen! It is so reassuring!

And I think lemons and blueberries were just made to go together. These cupcakes look fabulous!

Mmmm...cupcake. I love that the bottom layer is a blue stripe. I'm craving this as a midnight snack now. LOL. Fruit at night is good. =)

So moist and fluffy looking! I haven't made cupcakes in the longest time because they come out so dry, but I see how beautiful yours is, and now I must make these. Saving this!

Hey Kim,

I think we must have been "best" friends in another life. I just grated my knuckle on the cheese grater trying to grate onions! That does not feel good!! The cupcakes look delicious. Did you get a new camera??? Love the photos.

Gosh if I wrote a book on the mishaps of a chef's kitchen you might think I was an idiot! Pies without the eggs, but somehow I got it all down and I do love lemon, so this is a keeper!
