So I didn't use a cupcake recipe from my book this time. I almost did but then I noticed I had two bananas sitting in a bowl on my counter that were on the verge of death so I decided on banana cupcakes.
Here is what I used for these:
- 1 1/2 cups flour
- 3/4 cups sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1 stick melted butter
- 2 bananas, mashed
- 2 large eggs
- 1/2 tsp vanilla
In a large mixing bowl whisk together the flour, baking powder, baking soda, salt, and cinnamon. Next, add the melted butter, mashed bananas, eggs, and vanilla.
Fill muffin cups lined with papers 1/2 full with batter. Bake in a 350 degree oven for 15-18 minutes until toothpick inserted comes out clean.
Bake for 15-18 minutes until toothpick inserted into center of cupcake comes out clean.
Cool completely before frosting.
For the frosting you will need:
- 3 cups powdered sugar
- 1/4 cup creamy peanut butter (not the stirring kind)
- 1/4 cup butter, softened
- 2-4 tbsp milk
- 1 tbsp of honey
- 1 tsp vanilla

Love baking with bananas!! Like the addition of cinnamon to the cupcake and I LOVE the idea of peanut butter honey frosting.
You could have shown the one with a messy frosting and I'd still love it. I've got to try that honey frosting. That would go great on some chocolate cake I'm planning to bake. =)
