Tequila Lime Chicken Salad


So, tonight we had a Cinco de Mayo party on a plate!
This is my new favorite recipe! The flavors are so wonderful together!

Don't you love this plate! I got it from World Market! It was on sale for $1.49 so I just couldn't pass it up!



This is what went into the Chicken Marinade:
  • 1 cup orange juice
  • 2 shots Tequila
  • 2 tsp minced garlic
  • 1/4 cup olive oil
  • juice from one lime
  • 1/2 of a jalapeno, diced
  • 1 tbsp chopped cilantro
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1 tsp onion powder
  • 1/2 tsp kosher salt
  • 1/4 tsp white pepper
You will also need 10 chicken tenders.

Pour all of your ingredients into a large Ziploc bag and add your chicken. Marinade overnight. Cook on an outdoor grill or George Foreman Grill.


I also made a Pico de Gallo to go with the Tequila Lime Chicken.
  • 1 1/2 cups grape tomatoes, quartered
  • 3 green onions, thinly sliced
  • 1/2 jalapeno, chopped
  • juice from 1 lime
  • 1/2 cup chopped cilantro
  • 1 tsp minced garlic
  • 1/2 tsp salt
  • 1/4 tsp white pepper
Pour all of your ingredients into a bowl and stir to combine. Let stand for a bit while you cook your chicken so the flavors come together.

So, this is what went into the salad.

  • Tequila Lime Chicken
  • Lettuce
  • Pico de Gallo
  • Black Beans, warmed
  • Shredded Jack Cheese
  • Sliced Olives
  • Sour Cream
  • Crumbled Tortilla Chips
I also cooked up a little white rice with a 1/2 cup enchilada sauce, 1/4 cup petite diced tomatoes with green chilies and 1/4 cup sliced green onions.

Kim- This dish along with the pico de gallo sounds absolutely delicious. The marinade has so much intense flavor going on, what a perfect cinco de mayo choice.

Yummm, Tequila and lime are two of my favorite flavors in cooking!!! But if I have those two - I HAVE to have cilantro too!!!! I'm definitely gonna have to give this salad a try! Thanks for sharing!

I love tequila/lime marinated chicken...I usually serve it on it's own, but adding it to a salad with pico de gallo sounds fabulous.

Yeah, I was surprised to see servers on rollerskates! I can't imagine doing that without skates less much with them. I am a klutz and would drop everything!

First thing that I noticed was the kickin' plate! And then I noticed that we had falafel for dinner... which the kids hated.

But then I saw the Christopher Ranch garlic and thought....that came from just down the road from us! :)
