Strawberry and Cream Cupcakes


It was hard to choose which cupcake recipe to make this time from my new cupcake cookbook. They all look so scrumptious. I finally decided on these little cuties!


The cake mix isn't scratch in these and actually in the book this recipe calls for packaged frosting as well. I wanted to make my frosting from scratch so I used a recipe in the back of the cookbook for the cream cheese frosting.

For the cupcakes you will need:
  • 1 package of white cake mix
  • 3 egg whites
  • 1/3 cup oil
  • 1 1/4 cups strawberry soda
Heat the oven to 350 degrees. Line 24 muffin cups with paper baking cups. Mix as directed on box substituting carbonated beverage for the water and using oil and egg whites.


Fill muffin cup 2/3 full.
Bake as directed on box for 24 cupcakes. Allow to cool completely before frosting.


For the frosting you will need:
  • 1 8oz package of cream cheese softened
  • 1 tablespoon of milk
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar
  • 2 drops of red food coloring
In a large mixing bowl, beat cream cheese, milk, vanilla, and food coloring with an electric mixer on low speed until smooth. Gradually beat in powdered sugar, 1 cup at a time until smooth and spreadable.

(Feel free to giggle over my frosting. I haven't quite gotten the hang of my new frosting kit yet.)

You can leave these plain and simple or...

You can top 'em off with a slice of fresh strawberry!

Because the frosting is made from real cream cheese, you will want to place these in the refrigerator.


These are so light and moist and the frosting is outstanding!!

It has PINK batter???? Wow. I seriously gulped when I saw them all frosted and pretty. I guess I can just pretend I eat fun stuff through reading your blog.

BTW. I picked a ton of cherries from my neighbors tree and made FRESH "cherry cobbler" and another dish I call death by cherries and butter and and sugar with a dash of flour. I took it to share with Suzi's family and it was gone in about 10 minutes.

Food goes quick here.

Oh YUMMY! How adorable too...just love the white sprinkles on the pink. I've never seen soda in cupcakes...I'd love to try these!

They are so pretty - how cool that you put in strawberry soda!

When I used to volunteer at my friend's cake shop (before they could afford to hire anyone) my favorite thing to do was ice cupcakes! Sometimes it's easier to do when you start in the center, you just have to make sure to get plenty IN the center so the outside isn't taller. It also helps if the cupcake doesn't rise above the liner (trickery!).

For the record, I think yours look cute and whimsical.

Those are about the sweetest looking girly cupcakes I've seen in a while. I'm trying to remember if I've even seen strawberry soda, and I'm thinking it's a rare commodity around here. Nevertheless, your cupcakes look very good. I really like the looks of those little white sprinkles. Dresses those little beauties up nice and fancy!
