S'mores Cupcakes



I was at the bookstore the other day and I spotted this lovely cookbook! I can't tell you how much I love it! There are scads of wonderful cupcake ideas in here. Some call for box mix and there are also plenty of scratch recipes.



This is one of the recipes in my sweet new cookbook.
Aren't these just the most adorable little cupcakes you ever laid eyes on!!



Here is what you will need for the cupcakes:
  • 1 box of yellow cake mix (the book calls for the Pudding in the mix kind but the store I went to didn't have it so I got this one instead.)
  • Water, oil, and eggs called for on the cake box
  • 1 cup graham cracker crumbs
  • 2 Chocolate bars, finely chopped (the recipe calls for four bars but I think two is plenty.)
Heat your oven to 350 degrees F. Place paper baking cups in each of 24 muffin cups. In a mixing bowl, beat cake mix, water, oil and eggs with an electric mixer on low speed for 30 seconds. Beat on medium speed for two minutes, scraping bowl occasionally.



Mmm. Chocolate!



Fold in the graham cracker and chocolate.



Divide evenly amoung muffin cups.



Bake 15-20 minutes until toothpick inserted comes out clean.






Here is the frosting recipe:
  • 1 jar (7 0z.) of marshmallow cream
  • 1/2 cup butter, softened
  • 2 cups powdered sugar
  • 1 to 2 tsp milk
  • 24 chocolate teddy graham and 24 cinnamon or vanilla teddy grahams
  • 2-3 chocolate bars divided into rectangles
Remove lid and foil from marshmallow cream and microwave 15 to 20 seconds to soften. Place the marshmallow cream, butter and powdered sugar into a mixing bowl. Blend on low speed until well blended. Add your milk 1/2 tsp at a time, to make frosting spreadable. Frost cupcakes.

Place a rectangle of chocolate and two teddy grahams atop each cupcake. After frosting has set, store loosely covered at room temperature.

I think this are definitely at hit at our house!

Those are adorable! My kids would love those (and me too!). On my 24 hour cabbage salad yesterday it wasn't mustard twice... the second what suppose to be mustard seed. Thanks for pointing that out!

MMMmmmmm.... my son was just asking about S'mores this morning - out of the blue. How ironic! They look like something fun for kids to help with, too,

(I just have to say... "2 chocolate bars are enough..." What?!?! I think you mistyped.)
