Italian Turkey Sausage and Macaroni Toss

Do you ever just plum run out of ideas for dinner! Do you ever open the cupboard and/or the fridge and just stand there scratching your head? I was doing this tonight and then it hit me! I could throw a little of this and a little of that together!



Here is the this and that used in this dish:

• 1 package of mild Italian Turkey Sausages, grilled and sliced
  
• 1 cup macaroni noodles, cooked al dente
  
• 1 tbsp olive oil
• 1 tsp minced garlic
• 1 zucchini, sliced
  
• 1 15 oz can petite diced tomaoes, drained
• 1 tsp dried oregano
• 1/2 tsp kosher salt
• cracked pepper
• 1/4 cup parmesan cheese
• 1/4 cup jack cheese
• 1 tbsp sliced green onion
  
• 1 tbsp of fresh spicy basil, chopped

First I placed the sausages on my outdoor grill to cook. While they were cooking I cooked up my pasta.

In a large skillet heat 1 tbsp olive oil. Add the garlic and saute for a minute. Add the zucchini and cook, stirring for about 1-2 minutes.

Next, add the tomatoes, oregano, salt and pepper.

Stir in the macaroni and the sausage. Top with the cheeses, green onion and fresh basil.

I thought this had such delightful flavors!
