Italian Sausage and Peppers Breakfast Skillet



Okay, I know this is not quite as cute as teddy bears on cupcakes but it does make for a yummy breakfast or brunch dish.



Here is what I used for this great breakfast skillet:
  • Six eggs (My sixth egg is MIA in this photo.)
  • 1 Italian Turkey Sausage link, grilled and diced
  • 1/2 cup red and green pepper, diced
  • 1/2 cup jack cheese (You can use Italian cheeses I was out so I did a little substituting.)
  • 1 tbsp sliced green onion
  • 1 tsp fresh spicy basil, chopped
  • salt and pepper to taste
  • 1 few dashes of hot sauce for a little kick!


Saute your sausage and peppers in a tbsp of butter for 2 or 3 minutes.



Next, add in your egg and cook thoroughly, stirring often.



Top with cheese, green onions, and basil.
(I threw a little dollop of plain Greek Yogurt on there too.)
How easy is that!!
Tomato would be awesome on here also, unfortunately, I was fresh out!

You know how good you are? I didn't read my bloglist for a couple days but I did cruise past the titles and yet somehow your title wiggled into my brain and I ate something VERY similar to this yesterday for breakfast! LOL!

I LOVE this kind of breakfast with all those flavors working in perfect harmony. I lovelovelove fresh basil.

Oh and guess what? The zinnia seeds I planted on Saturday have already sprouted! I couldn't believe my eyes.

I love this - I do a version for dinner - no eggs - but this would be great (as stated previously) for any meal. This was made for the long Memorial Day weekend. Mmmm.

I love egg dishes. I get the Egg Beaters (egg whites) at Costco and I don't really love them plain, but they would be delicious with this. Hopefully this recipe will fare better than the baked oatmeal :)

That looks miles better than the Marie CAlendars cornbread mix I poured water on and baked this morning. I only wish my family would eat veggies or more creative things for breakfast meals. But I guess there is never a better time to start trying.

I did not get to try it but Suzi made your chicken from Cinco De Mayo and said it was AWESOME!!

When I get organized cooking again and dont feel so scattered I will attempt it too.
