Grilled Veggies Chicken and Flatbread with a Lemon and Basil Yogurt Dressing



We grilled up some Asparagus, Tomato, Zucchini, Chicken and Flatbread for dinner tonight. It was a Grilling Extravaganza!


I had a little of this here wine with my extravaganza. It's really quite good. Have you tried it?


As some of you know, I have a garden going and one of things I am growing is spicy basil. I decided to make a little yogurt dip using my yummy basil.


Here are the ingredients for the dip:
  • 1/2 cup Nancy's plain yogurt with honey
  • juice from 1/2 of a lemon
  • 1/2 tsp minced garlic
  • 1 tbsp fresh spicy basil
  • 1/2 tsp kosher salt
Mix all the ingredients together in a small bowl and put in the fridge while the veggies are cooking so the flavors can come together. This has terrific flavor! I can't wait to make it again!


Mmm. Veggies!


Brush the veggies with some olive, salt, and pepper and grilled until just tender.


Stick the flatbread on the grill as well to warm it up a bit.




Sprinkle the tomatoes with some fresh chopped basil.



I realize I haven't talked about the chicken yet. I just tossed it on the grill sprinkled with some dried basil, onion powder, salt and pepper.

You can put this together however you want really. You can stuff it all into the flatbread or eat it all separately. It's all up to you.


Don't you just love this time of year? I sure do!

Grilled veggies are awesome - last time I even grilled fennel and endive, along with zucchini and asparagus, and I tossed everything with a mixture of olive oil, balsamic vinegar and a bit of dijon. I'd like to try this yogurt dressing.

Peaking at your blog for the first time today and it is so nice. I went back and looked at the mexican meatballs which sound delicious. I like to make lots of meatballs and keep them in the freezer for midweek meals. I like to play with flour but I have to eat real food to stay healthy.

Summer is my favorite time of the year. And one of the reasons is because my husbands will grill most of our dinners! This one is perfect!
