Chicken Taco Salad Wrap


This warm weather makes me feel a little lazy. This really made for a light easy meal.


Here is what I used for these tasty wraps:
  • 7-8 chicken tenders
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 tsp white pepper
  • 15 oz can black bean, drained and rinsed
  • 1/2 cup jack and sharp cheddar, grated
  • 1/2 cup Pace Tequila Lime Salsa
  • 1/2 cup sour cream
  • 1 tomato, diced
  • leaf lettuce, shredded
  • lightly chopped cilantro

I don't always care for bottled, store bought salsa but I found this the other day and I have to tell ya, it's pretty darn good.

Back to the recipe. Sprinkle the chicken with your spices.


Stick them on the grill and cook, turning occasionally until done.


You can leave your chicken whole or dice it up. I chose to do a little dicing.


That's it really. Just spread some sour cream and salsa onto your tortilla and layer with the chicken, beans, lettuce, tomato, cheese, and cilantro. Wrap it up tightly and enjoy. This will be so easy and great for summer! Serves 4-6.

I'm lazy when the weather is warm too and these taco wraps are perfect for those occasions. Thanks for taste testing the Pace sauce. I don't normally buy bottled either - only when I get good recommendations from people I trust.

Mmmm...wraps are alwasy great for when you don't want to do too many dishes. Food you can eat with your hands is always a plus in my book. Anyways...I love chicken salads/taco, too.

This one gets a super yum from me. It has the balance of crisp, tasty chicken, salsa, and cheese. I love me a great burrito! In fact I could eat them all the time. And I never thought of just adding beans like that!
