Blueberry Almond Coffee Cake


This coffee cake is so yummy! I know you will love it! Blueberries are one of my most favorite foods.


Here is what you will need to make this lovely coffee cake:
  • 6 tbsp butter, softened
  • 3 eggs
  • 1 1/3 cups all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup plus 2 tsp sugar
  • 2 cups fresh blueberries
  • 1 tsp almond extract
  • 1 tsp vanilla extract
  • 1/4 cup sliced almonds
Cream your butter and the 1/2 cup of sugar together until fluffy. Add 2 of the eggs one at a time, mixing after each egg is added. Stir in the extracts. Combine the flour, baking powder and salt in a small bowl, sift into your mixing bowl with the butter sugar mixture, stir to combine. Add the last egg and stir again to combine.


Fold in your beautiful blueberries.


Spread into a greased 8 inch baking pan. Top with the sliced almonds and the remaining 2 tsp of sugar.


Bake on 350 degrees for 35-40 minutes until toothpick inserted into center comes out clean.


Serve warm.
