Three Bean and Steak Chili

Aren't beans pretty!

I know you are thinking, "That's just what I need, another chili recipe!". This is seriously good stuff though and I think you ought to try it!

I cooked it in the crock-pot all day and it turned out really well!

Ingredients
  • 1 cup dried pinto beans
  • 1/2 cup dried black beans
  • 1/2 cup red beans
  • 1/2-1 lb boneless steak, cubed
  • 1 cup frozen corn
  • 1 15 oz can petite diced tomatoes
  • 1 15 oz can water (fill up the tomato can)
  • 1 clove garlic, minced
  • 1 1/2 tsp chili powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
Rinse and sort beans. Take out a big pot, pour in the beans, cover with water. Bring to a boil, reduce heat and simmer for about an hour. Drain. Dump everything into your crock-pot and cook on high 4-6 hours or on low 8-10 hours. Serve with cornbread.

Usually, by April, I'm over the whole chili thing. But it's cold again and this is looking mighty delicious... especially with steak.

There's an award for you on my blog - come by and pick it up. :)
