Strawberry Peach Upside-Down Cake



This was my contribution to Easter Dinner today. This cake just screams spring!!
Can you hear it?




It's super easy to make! That's one of the things I love about it!

Ingredients
  • 1 box of yellow cake mix
  • 3 eggs
  • 1/3 oil
  • 1 cup water
  • 1/4 cup butter
  • 1/2 cup loosely packed brown sugar
  • 1 1/2 cups fresh sliced strawberries
  • 1 can peaches (preferably juice packed)
  • Whipping cream
Drain peaches reserving 2 tbsp of the juice. Melt butter and pour into a 13x9 baking pan. Stir in the brown sugar and peach juice and spread evenly over bottom of pan. Arrange the strawberries and the peaches evenly over the brown sugar/butter mixture.

Mix cake batter according to directions. Carefully pour over fruit. Bake in a 350 degree oven for 34-38 minutes or until inserted toothpick comes out clean.

Serve warm with whipping cream.

Looks and sounds so good! I use the same recipe for pineapple upside down cake. I will have to try the strawberry peach next time.By the way, your flowers are beautiful!

That sounds absolutely delicous! I can definitely hear spring coming from it.

But what I am hearing more is the rain that is coming down in buckets outside :-( I know we will need this rain in August. But I am tired of it for now.
