Mini Turkey Meat Loaves with Buttermilk Cilantro Mashed Potatoes


It's Dinnertime!


Recently, I was contacted by Country Bob's to see if I would do a blog review of their All Purpose Sauce. I have to say, I was honored and excited to be asked! I had never heard of Country Bob's before I received their request.

They have a recipe in their brochure for meatloaf. Being the recipe rebel that I am, I decided to mix it up a little! I decided to use ground turkey in place of the beef.

When I make meatloaf I like to make mini loaves because they cook up faster than one large loaf. Plus, they are just so gosh darn cute!

I decided that the mashed potato recipe from a few nights ago definitely needed to be used again! I got a comment from Rebecca at Chow and Chatter suggesting that cilantro would also be nice in my mashed potatoes and I thought, "Why not, after all it is Wednesday the 29th of April. I'm gonna go for it!". (I crack myself up sometimes!!)


Here is what went into this cute little loaves of meat:
  • 1 1/2 lb ground turkey
  • 1/2 cup Country Bob's All Purpose Sauce
  • 2 eggs
  • 1/2 cup bread crumbs (If the meat is too wet add a little more.)
  • 3/4 tsp kosher salt
  • several turns of cracked pepper
Place all of your ingredients into a big bowl and combine well. Shape into 4 to 6 mini loaves. I like to cook my meatloaf on an oiled broiler pan. The grease can easily run off and down into the bottom of the pan. Bake at 350 degrees for about 40 minutes until meat thermometer reaches 190 degrees (That is what the guide say on my thermometer.) Drizzle meatloaf with a little more Country Bob's Sauce.

Serve with Cilantro Mashed Potatoes and sliced steamed carrots tossed with a little olive oil and dill.

I really enjoyed the flavor of this sauce! It's tangy, a little sweet and a litte spicy. I would definitely buy it!

Country Bob created his sauce back in 1968. He began to giving the sauce to friends and family. In 1977, he began selling his sauce. In 1982, Bob Edson, Terry Edson, Al Malekovic and Reed Malekovic formed a corporation with equal ownership.

Since that time Country Bob's has experienced tremendous growth. It's know wonder with Christ as their CEO!

I highly encourage you to pick up a bottle next time your out or if you go to their website they will send you a bottle to try for free. You can't beat that!

mmm...buttermilk and cilantro mashed potatoes sound really intresting and gooood! And thanks for the link to Country Bob's! I'd love to try them out after hearing so many good things about them...
