Greek Chicken Wrap



This was tonight's dinner and let me tell you, it was fabulous!



The crock-pot and I are becoming such great friends! We even went for pedis the other day!



Here is what went into my dear little friend!

Ingredients:
  • 1 lb boneless skinless chicken thighs or breasts
  • 1/4 cup white wine
  • 1/4 cup water
  • 1 tsp olive oil
  • juice from 1 lemon
  • 1 tsp oregano
  • 1 tsp salt
  • 1/4 tsp pepper
You will also need:
  • 4-6 large flour tortillas
  • several leaves of green leaf lettuce
  • 10 grape tomatoes, sliced
  • 1/2 cup feta cheese, crumbled (more if you love it like I do!)
  • 1/2 cup pitted Kalamata olives, sliced
Place all of your wet ingredients into the crock-pot. Stir to combine. Add chicken. Cook on High 4-6 hours or low 8-10 hours. Remove with a slotted spoon and shred.

On a flour tortilla, layer your lettuce, chicken, feta, tomato, and olives. Wrap up tightly. Slice in half. Eat up!

You can serve your chicken warm or cold. It's so moist and flavorful! It will be a great meal for the upcoming warmer temperatures!

Hey Kim what do you think these are better with chicken thighs or breasts? They sound really really awesome. I love that I can put them in crock pot!! I need some new recipes for my Crockpot. My Crockpot and myself have broken up!! This will definitely brings us back together....
