Pork Chops with White Wine and Herbs

I really hate to go to the market on the weekends! It is so stinking crowded that I can't even concentrate! I am really bad about making a list before I go. I just try to remember everything inside my little brain. Costco is the worst of all on Saturdays, but there are a few things I like to get there because the price is right! I like to get meat, refried beans, baking mix, peanut butter, syrup and ketchup, and anything else that falls in my cart as I stumble and trip over other shoppers. Anyway, sorry to ramble! Now, on to the recipe!

  • 4 boneless pork chops
  • 1 clove garlic
  • 1 or 2 carrots, peeled and diced
  • 1 or 2 ribs celery, peeled and diced
  • 1 tbsp butter
  • 1tbsp olive oil
  • 1 cup dry white wine
  • 1/2 cup half and half
  • 1 tsp worcestershire sauce
  • 1 tsp dried thyme (or 1 tbsp fresh thyme)
  • 1 tsp dried sage (or 1 tbsp fresh sage)
  • Salt and Pepper to taste
Melt your butter and oil in a large saute pan. Add your garlic, carrot and celery. Saute about 1 minutes on medium heat. Next, place your pork chops in the pan and brown on both sides. Add your wine, cream, worcestershire sauce, herbs, salt and pepper. Heat until simmering nicely and then reduce your heat to low and cook for about 20 minutes.

My husband and I are crazy for sauteed mushrooms, so I made this to go with the pork chops.
  • 1 or 2 zuccini, sliced
  • 1 cup sliced mushrooms
  • 1 tbsp butter (or a little more if you are butter lovers like we are)
  • 1 tsp minced garlic
  • 1 tsp dried thyme
Melt the butter in a saute pan. Add your garlic and saute for a minute. Dump in your veggies and saute until just tender.

I realize that this would be really awesome with risotto or wild rice, but after shopping all day, waiting in long lines and fighting traffic, we settled for Stove Top! (Don't judge me!)

~Enjoy~

P.S. This recipes would be even better cooked in a crock-pot all day!

This *would* be good in a crockpot!! Good call... We're on vacation this week, but I'm going to try this when I get home. It seems lately that if I don't put dinner in the crockpot I don't get to it and we have grilled cheese instead :(

It does look really yummy. And you're right, Costco on a Saturday is not a pretty sight.

About your comment, I think we get up and get going and get busy, and that's what can happen. The time passes so fast when you're busy!
