Broccoli and Cheese Twice Baked Potatoes

We had these with dinner tonight and they were so awesome! I have had twice baked potatoes before but I have never tried putting broccoli in them. My family just loved them! They are really easy to make and so delicious! Try 'em you'll Love 'em, or your money back!!

So, do not pass "Go", do not collect $200 dollars! Run to the market and get the following items.

4 large baking potatoes
1/2 cup sour cream
2 tbsp butter
1 cup frozen chopped broccoli, warmed
1 cup chedder cheese, grated
a little milk to gain the desired consistency
salt and pepper to taste

Scrub potatoes. Pick several times with a fork, oil very lightly and wrap in heavy-duty aluminum foil. Place into a 425 degree oven for around an hour until tender.

Cut top off of each potato like so. Scoop out potato and place into a large mixing bowl. Add your butter, sour cream, broccoli, cheese, milk, salt and pepper. Blend or hand mash until smooth and creamy. Spoon back into each potato skin and return to oven (in a lightly oiled baking pan). Bake an additional 15 minutes or until lightly browned.

You can serve this just with a salad or as a side dish.

Smashing Baby!!

You could come and be our cook for a week. REally it would be ok with me. My MIL makes these minus the broccoli but I think I could make it and my kids would eat it too! Thx. :)
