When the moon hits your eye...

I don't know if it's the cold weather or the time of year but for some reason or another I have been feeling a bit lazy. I have been feeling like a lump in a slump. As I was doing a little slumping on my sofa today I tuned in to Food Network and some woman on some cooking show was making empanadas. They looked fun and easy.

I eventually got off of my behind and took a little trip to the market to find small pie shells to make the empanadas. Of course, there were none to be had so I grabbed the big ones and switched gears a touch and made these pizza pies instead.

There's nothing to them really. Here's what I used.

1 ready made pie shell
3 tbsp marinara sauce
1/4 lb ground Italian sausage, cooked thoroughly
10 slices of pepperoni
2 thinly sliced crimini mushrooms
1/4 cup sliced red bell pepper
2/3 cup shredded mozzerella
2 tbsp grated parmesan
cracked pepper

1 tbsp melted butter
1 tbsp olive oil
1/2 tsp garlic powder

Layer all ingredients. Fold pie shell over and press edges to seal. Use a fork to crimp edges.

Brush top of shell with garlic butter mixture and bake in a 425 degree oven for about 18-20 minutes until golden brown.

I also made a broccoli, cheddar, and mozzerella pie. It was wonderful as well.

Oooo...empanadas. It's been a while since I've made them. These are the perfect meal for any occasion. i could chow down on a couple of those for a midnight snack.

This is a great idea! I really wanted to make empanadas the other day but didn't feel like making the crust. By which i mean the recipe called for shortening and I couldn't bring myself to go buy some. So i just used pizza dough instead. But I like this ready-made pie crust idea.

I have never made empanadas - didn't want to fuss with the pastry part. Great idea using a pie shell!
