I don't know if it's the cold weather or the time of year but for some reason or another I have been feeling a bit lazy. I have been feeling like a lump in a slump. As I was doing a little slumping on my sofa today I tuned in to Food Network and some woman on some cooking show was making empanadas. They looked fun and easy.
I eventually got off of my behind and took a little trip to the market to find small pie shells to make the empanadas. Of course, there were none to be had so I grabbed the big ones and switched gears a touch and made these pizza pies instead.
There's nothing to them really. Here's what I used.
1 ready made pie shell
3 tbsp marinara sauce
1/4 lb ground Italian sausage, cooked thoroughly
10 slices of pepperoni
2 thinly sliced crimini mushrooms
1/4 cup sliced red bell pepper
2/3 cup shredded mozzerella
2 tbsp grated parmesan
cracked pepper
1 tbsp melted butter
1 tbsp olive oil
1/2 tsp garlic powder
Layer all ingredients. Fold pie shell over and press edges to seal. Use a fork to crimp edges.
Brush top of shell with garlic butter mixture and bake in a 425 degree oven for about 18-20 minutes until golden brown.
I also made a broccoli, cheddar, and mozzerella pie. It was wonderful as well.
Both of these pies are easy, cheesy, and sure to pleasy! :D
I also wanted to send a big thanks out for a couple of recent awards that have been passed to me.

I love little pies! I recently did a post with hand held pies too. Yours turned out beautiful. Your blog is wonderful.
Oh like you header. Hey you were sounding like Dr Seuss there for a min!
You are amazing how you just change something up and come up with this totally delicious looking pie.

Oooo...empanadas. It's been a while since I've made them. These are the perfect meal for any occasion. i could chow down on a couple of those for a midnight snack.
ps. I like the new layout/header
You hit a slump and make empanadas. I hit a slump and hit the wine...
This is so funny, because guess what hubs wants for Christmas dinner? Empanadas and Paella! You evil genius, you!
What a cheesy goody. Love both versions.
That's what you do when you hit a slump!?! I grab a book, read for 5 minutes, and fall asleep.
Congratulations on your awards! Even in your slump you whip up such a tasty pizza pie. I love everything you put inside.
I love the new banner!! Tonight I am making pasta tomorrow night I am making your empanadas. Seriously, they look so good and I am sick of turkey leftovers!
Love the new blog look. Both of these sound delicious and incredibly easy. Kid friendly too!
I love the new blog layout! Very nice.
This is a great idea! I really wanted to make empanadas the other day but didn't feel like making the crust. By which i mean the recipe called for shortening and I couldn't bring myself to go buy some. So i just used pizza dough instead. But I like this ready-made pie crust idea.
Excellent fillings!
another great idea - I wish we could switch thinking caps for a while - I would love to see how yours fits.
Your new look is fantastic, Kim. Wow, I'm really impressed. Your empanadas look darn inticing after so many turkey leftovers. Guess I better make some.
I have never made empanadas - didn't want to fuss with the pastry part. Great idea using a pie shell!
Very tasty! A family favourite, to be sure!
Ooooh....those look yummy and easy to make. I will definitely have to give them a try. Thanks for sharing!
These are sort of like calzones with a twist.
Those both look great!
Mmmmmm...that looks so delicious!
I really love your empanadas. I'll have to try these sometime this week.
Oh wow--my husband would love these! He thinks calzones are too bready so these would be perfect!

Mmmmm.... pizza-pasties! Or a real pizza pie - however you name it - just melty and delicious. I'm not that creative when I turn lazy. Kudos!
As always, I'm drooling.
what a great idea... pie shell and leftovers equal something wonderful!
I've never thought about making calzone with pie crust, it's a great idea!
I love your new look...it's really lovely! Congrats on your awards! These empanadas look soooo good and I love both fillings you made!
Reminds me of a calzone...which I love!

Wow did I have to scroll down to say something :) Now I am going to have that song in my head during my open mic, I may break out in a song, but first I might have to find some pie!

Oh geez these look especially yummy and hearty for a cold day!
Pizza empanadas. Yummy! Pizza anything is welcome in this house. I've got that lump in a slump feeling this week too. Maybe it is the weather. Whatever it is, I hope it goes away soon!
Mmmm.. it just all looks sooo wonderfully yummy!!!
I forget when I last had those....look very tempting!
That is the perfect dinner! Yum and simple!
Ooh... I am loving that broccoli one! That happens to me too... I was lazily watching Barefoot Contessa whip up spaghetti and meatballs and suddenly I found myself at the store buying ingredients and then making it myself.
MMMMMMMMMM! When I am hungry for something really savory and good I always know where to go. I maintain it's just a shame you live in another state.
OH MY...does this look good. It's 5 am and I am starving! :))
