Grilled Garlic-Lime Chicken with Watermelon Salsa and an Award

Here is my entry for BSI (Blogger Secret Ingredient)

*I forgot to mention that there will be a prize awarded for the winning recipe.*

Now, I feel that there are going to be some strong opinions on this dish and that's okay! I have to admit that this was adventurous for me too! I wanted something really different. I don't usually like fruit with meat but I have got to tell you, this is actually terrific! The grilled flavor of the chicken, the salty taste of the feta, the spiciness of the jalepeno, the tartness of the lime, and the sweetness of the watermelon all came together for an extravaganza of flavors on the tongue!






Here is what I put into the "Salsa":
  • 2 cups diced watermelon, drained
  • 1/2 cup crumbled feta
  • 1 cup chopped red and yellow bell peppers
  • 1 small finely chopped jalapeno pepper
  • 2 tbsp chopped cilantro
  • 2 tbsp sliced green onion
  • juice from 1/2 a lime
  • 1/4 tsp each kosher salt and white pepper
Place all of your ingredients into a large bowl and toss gently. Refrigerate for about an hour before serving.






I marinated four boneless skinless chicken breasts in these ingredients:
  • 1/4 cup extra virgin olive oil
  • 1/2 cup dry white wine
  • juice from 1/2 a lime
  • 2 tsp mince garlic
Marinade the chicken for at least an hour. Grill Chicken on the BBQ or George Foreman. Place desired amount of Watermelon Salsa over Chicken.

I have had watermelon salsa before and was very pleased with the taste. This sounds so good on a hot day. I will try it and let you know my feedback when I make it in a few weeks. I love new recipes to stir up my taste buds:)
