sweet potato waffles and some mushy love stuff

16 years ago on this date I said "I do". So did the guy standing next to me. Rod Stewart sang Van Morrison. Friends and family wished us well. We ate a little cake and drank and little Champagne. We honeymooned on the Oregon Coast.



One anniversary was spent in a suite at the Heathman Hotel, sipping Champagne, watching Arsenic and Old Lace, and eating the most amazing flourless chocolate cake.

This morning, in honor of our undying love for one another, I whipped up some Sweet Potato Waffles!

How romantic is that!!

Sweet Potato Waffles
by theUngourmet

1 1/2 cups whole wheat flour
3 1/2 teaspoons baking powder
1 tbsp brown sugar
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1 1/4 cups mashed sweet potato
2 eggs, lightly beaten
1 cup low fat buttermilk
1 cup low fat milk
1/4 cup melted butter

Sift the flour and baking powder into a large mixing bowl. Add the remaining ingredients and stir to combine. Place 1/3 cup of batter onto a hot oiled waffle pan (You may need more or less depending on the size of your waffle pan). Cook to golden brown. Serve with warm maple syrup.

The sweet potatoes, buttermilk, and spices really make these waffles stand out. I think they would be great for a holiday breakfast or brunch. You could top with pecans and whipped cream as well.

My goodness 16 years! Congratulations! This is such a good and healthy version of waffles. It's so great that you figured out a way to integrate ingredients that already go so well with drizzled maple syrup.
