I was waiting in line at the supermarket the other day, trying to resist the urge to buy a half dozen of the magazines sitting there. I decided it wouldn't hurt to take a quick peek while I had a few moments to spare. During my page flipping I spotted a photo for sweet potatoes in an orange peel and it reminded me of the cupcakes I made last summer. Remember those? If not, click HERE. I can't remember now which magazine it was. It might have been Taste of Home. I didn't have time to peek at the recipe so I just came up with my own.
Sweet potatoes in orange cups
serves 4
1 very large sweet potato
2 tbsp butter
3 tbsp low fat buttermilk
1/2 tsp salt
1/4 tsp white pepper
1 tsp minced fresh ginger
2 oranges cut in 1/2 and hollowed out
(You can squeeze the juice out and reserve it for another recipe.)
24 mini marshmallows
4 tsp brown sugar
nutmeg
Peel sweet potato, cut into chunks and cook in boiling water until tender. Drain. Whip potatoes with butter, buttermilk, ginger, salt, and pepper.
Scoop mashed potatoes evenly between the 4 orange rinds. Top each with 6 mini marshmallows, brown sugar and nutmeg.
Place into a 400 degree oven for 15 minutes. Watch that the marshmallows don't get too brown.

I think these are so fun for Thanksgiving. You can easily adjust this for the amount of guests you are inviting.
Have a nice Sunday!

Oh! Those are cutie patooties! It reminds me of that episode of Everything Italian when Giada puts risotto in lemon cups...what a great presentation!
Sweet potato, marshmallows, oranges, where can it go wrong! Looks yummy!
What a clever idea!
How cute and delicious! That's a nice way to turn an ingredient into something very fancy.
These are cute!
Yes, I'm wild about them....I love baking things in oranges and lemons for the delicious sweet flavour you get. I've tried cheese, olives, tomatoes and anchovies baked in Lemon halves. Some chocolate cake in these shells would be terrific
Those look incredible! I'm in charge of sweet potatoes this year and I think I've found my recipe:)
That is sooo neat. although I loathe sweet potatoes lol..
I would love this, but my family isn't crazy about sweet potatoes (even with marshmallows) Maybe I'll just make it for myself. I could eat them all.
I love sweet potato orange cups. My version uses orange liquer. However they are flavored everyone enjoys the novelty of sweet potatoes cooked in orange cups.
Yeah I've seen these and they are so cute!! Beautiful dish.
These are adorable! The orange cups make for such a great presentation. They remind me of the sorbet that is sometimes sold in restaurants and served in lemon or orange cups. Sweet potatoes and citrus go really well together. I think it's that the added tang goes a long way.
This is a wonderful way to serve sweet potatoes, which pair quite well with oranges. Great job!
So inventive and very cute! I love the recipe and love the pun :)
These make a stunning presentation for the holidays.
Those are both gorgeous and adorable! I really like being able to make individual servings of things. And I think the sweet potatoes must be so interesting with the flavor from the orange rind.
I'm just like you in the grocery store checkout line - it's amazing if I can get out without buying a new food magazine (and I already subscribe to 5 or 6 different ones!)
Those are the cutest things ever!
oh wow these are adorable so will they be on your table?
oh my gosh, what a cute and fancy way to serve sweet potato! i love that idea!

These are too cool. I love the taste of sweet potato and orange together...I usually make an orange butter to put over ours at Thanksgiving. Cute idea :D
That is probably the coolest thing I've seen today. I mean I saw some weird stuff at the gym today, but these are orange sweet potato cups totally beat that. I'd even eat the rind :)
Um, think I have my Thanksgiving recipe. Those are GORGEOUS! THANKS!
As usual you make me drool all over myself! I need to come over here to visit when I am NOT HUNGRY!! Hope you have a good week :) I will try to figure out that header for you this week too xox

You are amazing!!! This is a perfect add-to for Thanksgiving! GREAT job - you are just way too creative ~ ♥
Oh Kim! These are absolutely delightful! you're a genius! The only problem is: I'll need a REALLY big-ass orange to contain the amount I will probably chow down! ;-)
Those are adorable! You are so clever. You need to make up a cookbook. I would be the first in line for it!
XOXO

Looks so good! And I could fix myself one, since hubby wouldn't touch a sweet potato. Great idea, thanks so much!!!!
thanks for stopping by! I have 2 tats on my back that are much larger than I originally planned. But isn't that the way it always go. I LURVE the idea of a cupcake tattoo!!! That is fantabulous!!!
