buttermilk apple spice mini cakes with warm caramel sauce

Technically this is an upside down cupcake so I guess a can count it as part of my own personal "make everything in cupcake form" challenge.

I have a confession to make. It's in my nature to be a bit of a forgetful klutz. My forgetful klutzy-ness was running at full speed during this near baking train wreck. There was flour spilling, molasses sloshing, apple dropping (right into the gloppy gooey batter). The worst flub up was when I finished mixing the batter and was ready to fill the muffins cups when I realized I had completely forgotten to add the sugar! Oh. My. Word!

I carefully stirred in the sugar and hoped for the best.

Buttermilk Apple Spice Mini Cakes

1 1/2 cups whole wheat flour
1 1/2 cups all purpose flour
1 tsp baking soda
1/2 tsp salt
1 cup sugar
1 tsp ground cinnamon
1/2 tsp nutmeg
1 tsp fresh minced ginger
3 large eggs
2 tbsp molasses
2 tsp vanilla extract
1/2 cup vegetable oil
1 1/2 cups low fat buttermilk
3 large apples peeled and grated

Sift together dry ingredients. Set aside. In a large mixing bowl combine the ginger, sugar, eggs, molasses, vanilla, oil, and buttermilk. Mix on low speed just until combined. Add the dry ingredients and mix on medium speed for 2 minutes. Fold in grated apples.

Fill lightly oiled muffin cups 1/2 full and bake in a 350 degree oven for 16-18 minutes or until toothpick inserted in center comes out clean. Cool. Makes about 24 cakes.

Serve with a scoop of vanilla ice cream, a drizzle of warm caramel sauce, and a dusting of powdered sugar.

My kids ate this in about 3 seconds and let me know that it was "Blog Worthy". I hope you will enjoy it as well!

The next time I make this I might add a bit more oil and reduce the buttermilk a touch. We'll see.

Don't worry I can be a klutz, too. There have been several times when I nearly forgot the add the salt and/or baking soda to a loaf of bread.

Your mini cakes look like they turned out fine. ;-D

Oh taht looks wonderful. I would forget something without fail I like you get in a rush and miss some ingredients that I am rushing to put in at the last minute

that happened to me too, I'm a bit of a klutz and a scatter-brain too ( I suspect it was the epidural) but I'm glad yours still turned out great Kim :); I'm not surprise your kids gobbled it up, it looks really inviting :)...

I can also be pretty klutzy in a kitchen. Last night I opened a bag of frozen corn a little too quickly and it all flew out all over the kitchen floor :)

Wow and wow again! Those sound so delicious! Your story reminded me of a time when Brenda (you know...) contributed her usual yummy pumpkin pies to our Thanksgiving dinner and forgot the sugar and forgot she forgot the sugar until we were each beginning to consume a substantial piece, topped with whipped cream and in harmony, donned a quizzical expression only to bring on her confession of guilt. It all ended in a jubalent burst of laughter and promises of better pie to come.

These look gorgeous and delicious! You'd never know that you nearly forgot the sugar. BTW, that happened to me recently too...when I was making my Halloween pumpkin spiced donuts. I had to add in the sugar at the end and try not to overstir, yet incorporate the sugar. Arrrgh!

I think everyone has a little klutz in them. Forgetting to add sugar is definitely something that I would do. But you know what - it looks like it turned out amazingly well anyway! That warm caramel sauce looks superb. I may make that and just eat it with a spoon.
