pumpkin cookies for my lil' pumpkins

Isn't it just so much fun to goof around in Flickr! They have some really fun Halloween stuff right now. My daughter and I were cracking up adding spiders and ghosts and other spooky fun to our photos!

I haven't made sugar cookies in the longest time. I was in Target today picking up a few things and I spotted the Pillsbury Halloween cookies. They were two and a half bucks each and I thought, "Ya know what, I can make some at home for a lot less money!", and that's just what I did.

Have you ever tried putting buttermilk in your sugar cookies? You should try it if you haven't!

Halloween Cutout Cookies

1 cup whole wheat flour (I've got to add a little nutrition to these!)
2 cups unbleached all purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
1 cup sugar
1 cup cold butter
1 egg, lightly beaten
3 tbsp low fat buttermilk
1 tsp almond extract

Sift the flours, baking powder, salt and sugar together. Cut the butter in until crumbly. Stir in the egg, buttermilk, and almond extract. Mix well. Form dough into a ball and place in the fridge for several hours or even overnight.

Roll out to 1/4 inch thick. Use your favorite cookie cutters to cut out cookies.

Place onto a cookie sheet and bake at 400 degrees for 6 to 8 minutes until nicely browned.

Allow to cool completely before frosting.


For the frosting

1/4 cup butter, softened
1 tsp almond extract
1 tbsp of milk (or more)
1 cup (or more) powdered sugar
red and yellow gel food coloring

sprinkles

Mix the butter, extract, and milk until creamy. Add the powdered sugar a bit at a time until desired consistency is reached, adding more milk or sugar if needed. Stir in food coloring to desired color.

Frost and sprinkle. You might want to double your frosting if you or your family, neighbors, friends, coworkers, or friendly ghosts are frosting lovers. :D

The amount of cookies you get out of this recipe will depend on how big your cutouts are. We managed to make about a dozen of the pumpkins.

I love sugar cookies, too. Especially for the different shapes and decorations you can do with them. Makes them more fun to eat.

You can make them for cheaper AND they taste better. Plus they don't have any weird chemicals or preservatives in them. They look fantastic! So cutely decorated. :-)

I wonder why sugar cookies tend to get lost in the mix. Sugar cookies are just plain good.
