I have made an important decision. I have decided to drive my family nuts by making everything in cupcake form! Doesn't that sound like a whole mess of mealtime fun?
This is my first attempt at Lasagna Cupcakes and I have to tell ya, they were a huge hit!
They are a bit messy and take a little bit more time but it's so worth it!
Chicken and Spinach Lasagna Cupcakes
by theUngourmet
1 lb ground chicken
2 cloves minced garlic
8 oz canned petite diced tomatoes undrained
8 oz canned tomato sauce
1/2 tsp salt
1 tsp dried oregano
1 tsp dried basil
1/2 tsp cracked pepper
8 lasagna noodles, cooked al dente
1 beaten egg
2 cups ricotta cheese
1/2 cup shredded Parmesan cheese
1 cup frozen spinach, thawed and well drained
2 cups shredded mozzarella
1 tbsp dried parsley
1/4 cup shredded or grated Parmesan
Print recipe
1 lb ground chicken
2 cloves minced garlic
8 oz canned petite diced tomatoes undrained
8 oz canned tomato sauce
1/2 tsp salt
1 tsp dried oregano
1 tsp dried basil
1/2 tsp cracked pepper
8 lasagna noodles, cooked al dente
1 beaten egg
2 cups ricotta cheese
1/2 cup shredded Parmesan cheese
1 cup frozen spinach, thawed and well drained
2 cups shredded mozzarella
1 tbsp dried parsley
1/4 cup shredded or grated Parmesan
Print recipe
Thoroughly cook the ground chicken in a large skillet. Add the tomatoes, sauce, garlic, spices, salt and pepper. Cover and simmer for 10-15 minutes.
Combine the egg, ricotta, Parmesan, and spinach.
Using a glass or cookie cutter that is close to the size of the muffin cups, cut 3 circles out of each noodle for a total of 24 circles.
Place 1 noodle circle in each muffin cup. Layer meat sauce, ricotta mixture, and shredded mozzarella. Repeat. Top with a bit of parsley and grated Parmesan.
Cover loosely with a piece of foil that has been sprayed with oil and bake at 400 degrees for 25-30 minutes. Remove foil and bake for another 5 minutes to brown on top.
Let the "cupcakes" sit for at least 10 minutes for easier removal.
I didn't want to let any food go to waste so I tossed any ingredients that didn't fit into the muffin cups into a small baking dish to bake another night.
These are so fun and yummy! I can't wait to make them again!

I love your idea of making everything into cupcakes! That is so cute and lots of fun. How could that drive your family nuts?? They should appreciate your creativity. :-)
LOL, that is hilarious...everything in cupcake form! But I love little cupcakey-things...and lasagna is no exceptions! Sounds yummy. And congrats on your awards!
Congrats on the awards.. Love the idea of this into a cupcake form, that would be such fun and more tempting for kids to eat it somehow, Id bet!
How neat! A savoury "cupcake" :-)) It does look very tempting and comforting.
This is a fantastical idea. I think most foods would be better in cupcake form. If only by association with the idea of cupcakes. I mean, just thinking about cupcakes puts me in a good mood.
So does thinking about lasagna, however. I love the chicken and spinach combination!
I can see why these were a huge hit. They look beautiful. Isn't it great to be a foodie? You can come up with all kind of themes and ideas to play out on the family. The cupcake idea is a really cool one.
I love meatloaf muffins, so why not lasagna? Great idea!

Yes, I agree, everything in cupcake form.
I have seen Bob Blumer make meatloaf cupcakes with a mashie topping. In case you need ideas!
Great idea, Kim. I would freeze any leftovers and then be able to have a single serving of lasagna. Brilliant. Love all that cheesy goodness.

Small bite size lasagna sounds fun, I'm sure it won't drive them batty or spook them away :)
I love anything in muffin form. And I am a fool for lasagna.
I love your creative cupcakes. You had me at the stuffing and mashed potatoes which was listed first. I have to see if I can think of anything that beats that.
Congratulations on your awards. So nice to see them here.
Congrats on your awards :) I love lasagna. That's a really cute idea making them in cupcake form.
Very creative (and good for convincing fussy children to eat!)
This is awesome. I was a little scared at the title...anything with spinach and cupcakes doesnt sound very appetizing...but this...yummmmmmm
It looks good!
Congrats on your SITS day.
I love miniature food!! And your pics are making me drool. Hope to see more crazy cupcake recipes.
That's too funny. That's totally something I would do...and perhaps should do...heck, maybe it would make less dishes, which would make my husband happy...
What a cool idea! I bet that would work well for a buffet. Easier than struggling to cut a pan of lasagna! Stopping by from SITS.
Yum! I make meatloaf cupcakes and my family loves them.
The title grossed me out a bit so I HAD to check out the post. I feel muche better now. :) Looks delicious. Happy SITS day to you. I will be back to try some yummy recipes.
I can't wait to make these sometime! They look heavenly...
How cool is that?!?!? I love your ideas!
sweetjeanette.blogspot.com
Definitely looks tasty! I wonder how well they would freeze uncooked? If that works it seems like it would be great to have on hand for picky eaters!
I think I might start trying to "cupcake" everything, I mean really... everything is better when it looks like a cupcakes!!!
Happy SITS day!
Hey - that is a fantastic idea! I do something similar with meatloaf - I call them meatloaf muffins. It's so much easier and cooks so much quicker as well.
Definitely going to try this!
What a fun way to make lasagna! Will definitely have to try that! My kid's favorite dinner in cupcake form is meatloaf. But I think they'll love this too!
Happy SITS!
i am so totally making the mashed potatoe cupcakes... what an awesome idea...
stopping in from sits... congrats on being the FB... :-)
Cupcake meals! The idea cracks me up! But maybe it's a good way to control portion size!
@cheapchichome. I see a cupcake cookbook in your future! Please let your SITas know when it's a reality!
I've always wanted to try to do this. Happy SITS day!
Since I love cooking this was a wonderful FB for me as a first time SITS user... I also have some lasagna loving kids...and these are perfect for them. Love your blog... and the pictures are just mouth watering..

What a great way to control your portion sizes, love the name too "Lasagna Cupcakes", very creative. :)
Love the idea of all meals in cupcake form! Now there's a way to get the kids to eat everything...just bake in muffin pan and add "cupcakes" after everything...meatloaf cupcakes, veggie cupcakes....endless possibilities.
Kudos!
Super Yummy!
This is a great idea for a Cub Scout outing. I would also so maybe party food -- but even though they're small I'm guessing they would be a little messy for finger food?!
Love this idea!
Everything in cupcake form must make mealtime interesting.
Love this clever idea.
I can imagine saying to my sons:
"you must it all of your cupcake to get dessert" ha ha
happy SITS day
That is soooo clever! Love it! Congratulations on your SITS day!
Happy SITS spotlight day, and thank you so much for posting this recipe! I posted about it on twitter, so I hope a lot of other new people come check out your blog too!
Oh my gosh, that looks SO delish!
What a great idea! This technique allows for a lot of creative plating options, and would even be wonderful for people watching their weight since it creates "portion control". They lookk positively delicious!

WOW this sounds good. Monday is menu planning day so I am going to add this one! Thanks!
Stopping by from SITS!!!
Oh YUM!!!
Cupcake frenzy! :)
I bet cupcake form makes dinner time more exciting for little guys. How fun! Did you use paper cups, or did the mini lasagnas keep their shape?
These look SO yummy! I love the idea of mini lasagna portions - especially for kids. Am definitely going to have to try this.
I am just blown away by the idea of a savory cupcake.
Wait.... yes, my mind has been blown.
Congratulations on your awards!
Oh I know the kid would love this one!
Ever since the new baby entered the house he has been *obsessed* with baby everything!
To him, this would be baby lasagna! :)
I love lasagna in any form and yours looks very good from here! And I see that we are both part of BloggerAid. It's getting exciting waiting for the cookbook to come out. : )
Love all the "cupcake" ideas! Great way to make simple, cute servings :-)
Phew, I was so glad to see that these weren't an actual "cupcake" with those ingredients in it! :) What a fun & yummy idea. We love lasagna at our house, so I'm going to have to try this! Enjoy your day in the SITS spotlight.
These look SO (to the tenth power) good. And simple. Golly, I have to try these.
And congrats on the slew of awards!

-Victoria D.
what a great idea. I had recently decided to make my kid tested meatloaf recipe in muffin tins. It worked out great.
Happy Feature day on SITS!
You would think after all this time visiting, that I would know better than to stop by when I'm hungry! YUMMY!
Stopping by from SITS - everything looks scrumptious!
What a fun idea! They look yummy too... Congrats on the awards. From what I've seen so far looks they are well deserved.

They look super good!!! Yum!
What a great idea - they look delicious!
Too funny, and well, delicious. I'm totally jealous of your family, I wouldn't mind eating everything in cupcake form. There's a certain frivolous factor that comes with a cupcake, so by default all your food must be fun and silly!
That recipe sounds like something I'd love to try.
Congrats on your SITS day!
stopping by from SITS! This recipe is right up my ally! Yummy!
Yummy! Neat idea for lasagna.
These are great recipes! I have been inspired... maybe my kids will eat them if I make lasgna into muffins. Awesome idea.
How cute are those??? I need to make some lasagna muffins now!
Lasagna...yummy. Clever idea!!
What a wonderful idea! I am so going to try this. It will make for the perfect lunch leftover size, and if I make it in my Demarle Texas Muffin pan, cleanup will be a breeze.
Thanks for the idea!
These look awesome!! I can't wait to try them.
This looks like a great idea for a party, but they sure do look messy. Maybe I should try this for a potluck sometime!
Me too, me too! I always make things in cupcake form...my kids actually eat it that way, everyone gets their own so there is no fighting, and it cooks way faster. Can't wait to try your lasagna cupcakes. Looks delicious.
Happy SITS
Alex @ www.MaWhats4Dinner.com
WOW...I never knew I could do so much with a cupcake tin! Congrats on all your awards and what a fun way to eat...I want some! Happy SITS day!
such a great idea...I'm going to have to make those!! Happy SITSta's day {a day late :(}
What a fantastic idea, making savoury cupcakes. Lasagna surely appeals to everyone. Must try that with my family... Maybe the novel presentation will overpower their usual suspicion when I bring something new to the table.
Happy SITSday belatedly!
LOVE this idea - instant portion control!
YUM! And what a perfect little portion!
Sounds and looks fantastic!!! What a great idea to make everything into cupcakes! My kids would love that. Congrats and Happy SITS DAY!!!!
