You can have it both ways!


This was dinner last night. Don't you just love all of this color! One of the things I think is cool about this recipe is that is can be cooked this way in the oven like a pizza or.....

with a lid on it and grilled up like a quesadilla!

It's simply delicious either way!

Chicken mushroom bacon and cheese quesadilla/pizza

Ingredients

Serves 4

1 chicken breast, cooked the thinly sliced
1 tbsp olive oil
1 cup sliced mushrooms
4 slices turkey bacon, chopped
2 oz feta cheese
1 cup sharp cheddar
diced tomato
chopped chives
Balsamic vinegar
medium sized whole wheat tortillas

Heat oil in a skillet, add chopped bacon and cook until crisp. Add mushrooms and cook for another minute or two, stirring.

Grab a tortilla and layer cheddar cheese, chicken, bacon, mushroom, feta, tomato and chives.

Pizza Style: Place into a 400 degree oven for 5 minutes or so. Watch carefully! Remove from oven and drizzle with Balsamic.

Quesadilla Style: Place on the griddle, drizzle with Balsamic. Place another tortilla on top. Grill on both sides until lightly browned.

The Balsamic added the zippy flavor I love in my recipes. I think you'll love this too!

I love all those colours. And balsamic vinegar too, it adds such a great flavour to everything. Hear me, I live exactly where balsamic is produced, I must love it!

It's a pizzadilla since it can be made in two ways. lol. Anything with cheese and fresh tomatoes is a winner in my book.

I remember the chef from sesame street. I always liked him.

the restaurant I used to work at in Newport Beach had a jack cheese, mushroom, bacon quesadilla that was SO delicious!

Don't you just love how the Swedish Chef is a puppet but has human hands - that always cracked me up!!! Ever since I discovered feta cheese, I use it all the time - YUMMM. If you call anything a pizza I'll eat it so I think I'll try it that way first. Thanks again, girl ~ ♥

Haha I love the Swedish chef! It reminds me of the clock my mom used to have in her kitchen. The clock's big and little hands were wooden spoons :-)
