I'm such a ground chicken lover. No, Not Chicken Liver, Chicken LOVER! You guys are so silly! ;0)
I'm always on the look out for a fresh new way to make a burger or a wrap. It never occurred to me to use a biscuit for a bun until I jumped over to one of my new favorite blogs called
Sandwich 365. I spotted a pork sandwich over there with a biscuit as a bun and I knew I had to try it!
I actually have a confession to make. Shhhhh! Come closer. I'm in love with Sandwich 365. Please don't tell anyone, especially my husband. It will just be our little secret. Whew! I feel so much better now that I got that off my chest.

slider ingredients
1 lb ground chicken
3/4 cup plain bread crumbs
1/2 cup crumbled feta
1 tbsp chopped basil
1 tbsp chopped chives
2 cloves minced garlic
1 tsp kosher salt
1/2 tsp white pepper
Mix all ingredients thoroughly and place into the freezer while you get the biscuits ready. Trust me, it makes the chicken so much easier to work with. (It's much wetter than beef.)
For the biscuits
2 cups whole wheat flour
1 tbsp baking powder
1 tsp kosher salt
1 tsp chopped basil
1 tbsp chopped chives
1/2 cup shredded sharp cheddar cheese
1/4 cup shortening or butter
3/4-1 cup of plain nonfat yogurt
Combine dry ingredients. Cut in the shortening or butter. Add the yogurt and herbs, stir well.
Place on a floured board and knead 8 times. Roll out to 1/2 inch thickness. Use a glass or biscuit cutter to make 6 inch rounds. Bake in a 425 degree oven about 10 minutes.
Form chicken into 6 inch round patties. Grill or broil to proper poultry temperature.
Place on a biscuit and add a bit of spicy dijon mustard.
You can also add tomato or lettuce if you wish.
I really think this is my new favorite slider! Try it, Try it, you will see!

When I read chicken on a biscuit I thought Chik-fil-A but then I saw your picture and oh wow! so much better than Chik-fil-A!
I should try this because it looks amazing! The only chicken burgers I've had are those nasty frozen ones in a box. Definitely nowhere near as tasty as yours!
that sounds and looks wonderful....
I love what you've done here. Making the biscuits is definitely going the last mile for your family. I'll bet these were good.

I'll be honest...this looks better than any burger I've ever made! Wow. I'm in luck because I actually have a pound of ground chicken in the freezer!
How delicious!!The chicken sliders look great all on their own. Putting them on a flaky, cheesy biscuit puts them over the top!!

The basil is such an interesting addition... bet it tastes amazing. Will have to try!
Oh year ground chicken is way better than chicken liver... I love your biscuits! It is so original!
If I were not so turned off by the extremist PETA propaganda featured on Sandwich 365's blog, I'd probably enjoy it too. For now, I'll stick with yours. Love your recipe and this "chicken on a biscuit" looks amazing. I love that you made your own biscuit buns. Yum!
I just had a chicken biscuit yesterday. But it didn't look as good as this!
This looks amazing, and I love biscuits!
Terrific idea about the biscuits; they seem to have fallen out of favor, become old fashioned, with the introduction of "newer" breads. I love a good biscuit sandwich. I think you are going to start a wave!
Sandwich looks DELICIOUS! Fabulous, mouth watering pix!!
i haven't even tried it yet, and i'm in love with it too! delicious!
Great Biscuits!! This will get me high marks from my hubby!

You're the second blogger I've seen rave about ground chicken. I've honestly never tried it, but maybe I ought to give it a chance, this does look yummy!
You are making me very hungry!
Your blog should come with a warning: DO NOT READ WHILE HUNGRY!
My husband would just LOVE these!

Definitely want to try the whole wheat biscuits! I have a very odd 17yo - he actually prefers whole wheat to white, and complains when I make white bread- he wants me to make whole wheat instead!
Yummmmm. Honestly, I think the world would be a much nicer place if we all sprinkled feta cheese on everything.
The biscuit alone looks so yum and then you go and add that pattie! Delicious!
Happy SITS Day!
@cheapchichome. I will be trying these! (and passing your blog on to my daughter.) Thanks.
mmmmmm...i haven't had breakfast yet and this looks delicious! i will definitely give it a try! thanks for the creative cooking idea!
Ok yet another of our favorite staples for dining consumption.. I am constantly looking for a new way to make Chicken appetizing to my family and this fills both their loves.. thanks again for all of your creative cooking that makes it look so easy for those of us pitifully lacking in the inventive area for the kitchen..
I am making my grocery list! Yum!
I personally don't eat chicken but they look good regardless. ;)
Sounds super yummy! =)
happy SITS day!
Yummy Yummy, Happy Sits Day!
That's one helluva slider! Love it and can't wait to make it:)
It's probably good but how on earth do I get the family to eat it. It looks weird and these people don't do weird looking food.
Any suggestions on how I can make this meal with a distinct cupcake appearance?
BlogBaby's BabyMama

This actually seems like something that even I could make!! Thanks for sharing and I hope you enjoy your SITS day in the sun.
Please excuse me while I grab a napkin to clean up the drool induced by this recipe.....okay, that's better. Holy Moly girl! Those look so good! Just as you've endeavored to drive your family crazy by making everything n cupcake form, I'm thinking you very well may have inspired me to serve my family everything on a BISCUIT. I've got biscuits on the brain... Jenn @ rookno17.blogspot.com
Happy SITS DAY!

I'm not letting my husband see your blog...I have a feeling he would leave me and marry someone with your kitchen skillz!
I saw the title of this post and thought fried chicken - your slider not only looks more delicious than a slab of fried chicken but it also is so much more healthy. Thanks for the great idea!
Haven't thought of this combination before. I don't use much ground chicken but maybe I should give it a try. Thanks for this one.
This is no time (8:30p) for me to get hungry. Thanks a lot! ;o)
Congrats on your SITS day!
