Hurray for cupcakes! And cupcake challenges!
Rhiannon from Pink Sugar Desserts and Erica from Dollface Delights are puttin' on a little challenge and I couldn't pass it up!
When I first heard about this fun challenge thoughts of apples, cinnamon, and maple filled my mind. I finally came up with these lovely autumn cupcakes.
I used the following ingredients:
- 4 large eggs
- 2 tsp of vanilla
- 2 tsp ground cinnamon
- 1 1/2 cups low fat buttermilk
- 1 1/2 cups low fat milk
- 1/2 cup packed dark brown sugar
- 1 golden delicious apple, peeled and diced
- 12 slices or 5 cups of day old french bread, cubed
Mix up the eggs, vanilla, and sugar. Add in the milks, cinnamon, and apples. Fold in the bread.
Let it all sit for about 15 minutes.
Fill muffin liners full. I managed to get 16 muffins out of this mix.
Bake in a 350 degree oven for 22-25 minutes. Allow to cool.
For the yummy maple frosting you'll need:
- 1/2 cup softened butter
- 1 8 oz package of softened cream cheese
- 1 tsp maple extract
- 1 tsp vanilla extract
- 3 cups powdered sugar
Top frosting with a sprinkle of raw sugar if desired.
These are just amazing! Perfect flavors for autumn!
Happy Weekend to you all!

wow great cupcakes love them
Sophie, it is a crime against nature not to love frosting; but I think you may be able to convince nature to let you off with a warning, since your recently-posted omelette looks so colorful and delicious ;)
Ungourmet, I am exceedingly jealous of this recipe. It epitomizes what I'm trying to do with the Chickenless Kitchen. Once we start thinking outside the box about the basic ingredients in a given type of food (for instance, a cupcake), anything is possible! Thanks and best of luck with the challenges.
those look wonderfully tasty! and they look very autumnish!
Also- I forgot to mention that a long while back I put a quick link to your site. You can view the post here:

Maple, apples, autumn, autmn, AUTMN! Wow - theseare calling my name and I must answer. What a grand recipe!
You made that up??? I am SOOO impressed with you - AGAIN. I just turned a lady I work with onto your blog today (we were slow at work, what can I say). She doesn't blog, but was talking about cooking with turkey and such and I told her I knew of a perfect place to get good recipes because you use a lot of ground turkey and chicken. She was THRILLED!!! Have a good day ~ ♥
I am incredibly impressed with your recipe! Great job! I must ask, how do you keep your liners looking so lovely throughout the baking process? I find myself buying cute liners only lose the design on them once I bake anything in them :-\ Any tips/tricks/advice? :)
Save one for me. I'm on my way!
Such unique and creative cupcakes! A must try for sure and I know they'll be my instant favorite!
