Mini gingerbread loaves

Help! I've started baking and now I can't stop!

I just had to share this gingerbread recipe with you. It's so darn good! I love the warm, spicy goodness of gingerbread.

I added some extras to my bread. A bit of dates, cranberry and pecans made it all that much more delectable!

I topped the bread with some ginger citrus frosting just for fun.

Hey do ya think Santa would like a loaf of gingerbread instead of cookies this year?

Mini Gingerbread Loaves

Makes 3 mini loaves

1 1/2 cups all purpose flour
1/4 cup packed brown sugar
1 tsp cinnamon
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1/4 chopped dates
1/3 cup chopped dried cranberry
1/3 cup chopped pecans
1/2 cup softened butter
1/2 cup molasses
1/2 cup water
1 1/2 tsp fresh minced ginger
1 egg

In a bowl combine the flour, brown sugar, cinnamon, baking powder, baking soda, salt, dates, cranberries and pecans.

Place butter in a large bowl and using an electric mixer, beat until creamy. Add the molasses, water, ginger, and egg. Mix to combine. Add the flour mixture and beat until well combined.

Divide evenly into greased mini loaf pans. Place loaf pans into a 350 degree oven for about 30-35 minutes or until toothpick inserted comes out clean. Cool.

For frosting

1/4 cup softened butter
1 tbsp 1/2 and 1/2 or milk
1 tbsp orange juice
1 tsp vanilla
1/4 tsp fresh minced ginger
1 tsp orange zest
2 cups powdered sugar

Blend butter with electric mixer until creamy. Add the milk, orange juice, vanilla, ginger, and orange zest. Blend well. Add the sugar a little at a time until creamy. Adjusting ingredients as needed to reach desired consistency.

haha! when i first looked at this i was trying to figure out how you got the ginger bread to come out white. *duh kallay* clearly someone (me) needs sleep.

your cakes look great though! if i were santa i'd eat them with a serving fork!

Haha I feel exactly the same way! Once I started making biscotti yesterday, I just couldn't stop. It's like, once the kitchen is a wreck, you might as well just keep on going!

Here's a question I've always wondered - if a recipe calls for dried cranberries, can you use Craisins instead? I usually have those around more than dried cranberries but wouldn't make a switch without knowing for sure - I definitely don't have your know-how!! Thanks and have a Merry Christmas ~ ♥

I made these yesterday, but instead of making mini loaves I made muffins -because around here we are so lazy, we don't even want to get a knife out of the drawer. I cooked them for only 20 minutes and they turned out AWESOME! Thanks for sharing such a great recipe!
